Well, when I started this blog I was a college professor (I have a different job now) with a PhD in Renaissance history. In a way, that sounds more preposterous, right? lol So I tend to give people the benefit of the doubt.
Mmhmm! It’s red velvet cake mix, a melted stick o’ butter, two eggs, and a teaspoon of vanilla. Scoop out the dough with a tablespoon. Bake at 350f for 10-12 minutes. Recipes say 1 egg, but don’t trust that—go with 2. Let them sit on the hot pan for 5 minutes once out of the oven, then move them to cool (this keeps them chewy). The frosting is honestly overkill—they’re tasty on their own.
And, yes, I am the cookie master to the point that one of my besties tried to get me to set up a mobile cookie stand at our subway station. haha
I made some Red Velvet cookie sandwiches (with cream cheese frosting filling) in honor of the forthcoming debut of SM Entertainment’s new girl group. My husband’s verdict: if their career is half as good as these cookies, they have a very bright future ahead of them. Fighting! from the fanstagram
